What the Gorenak seal represents

Gorenak identifies cider that undergoes quality checks, including analyses and sensory tastings. The HAZI Foundation and the Fraisoro laboratory take part in assessing these ciders. The seal helps you recognise that assessment when choosing a bottle.

Quality is checked during production and through tasting. Analyses allow product parameters to be reviewed, while sensory assessment considers its characteristics when tasted. These are complementary ways of assessing the cider we sell with this seal.

Care for the apples and the production process

When making Saizar Gorenak, we pay attention to apple ripeness and the timing of the harvest. During production, we also monitor aspects such as the sugars in the must and acidity. This is part of the work that takes place before bottling and underpins our care for the raw material.

Our cidery is in Usurbil, Gipuzkoa. There, Saizar’s cider-making activity combines the skills passed down through the family with measurement and control systems incorporated into our facilities.
